Single serve baked oatmeal is a delicious and nutritious way to start your morning! It's a healthy breakfast, but tastes like an oatmeal cookie.

Whether you're an oatmeal lover or not, you're going to love this baked oatmeal. My recipe takes a normally boring breakfast staple to a whole new level with lots of yummy mix-ins, like berries, apples, and even chocolate. And there's no need to make a large batch all at once when instead you can make healthy baked oatmeal for one, easy peasy!
I'm a sucker for indulgent breakfasts, like tiramisu overnight oats, homemade croissants, cinnamon rolls, and good old fashioned pancakes. Admittedly, not all of those recipes are what one would call healthy, but boy are they good. But with my single serving baked oatmeal, you get the best of both worlds - delicious and healthy at the same time. And they're gluten free too!
So far, I've come up with five different ways to make baked oatmeal, but have at least a dozen more ideas in mind, so stay tuned for updates.

The reason I'm calling the plain version plain/banana is because the base of my baked oatmeal recipe includes a banana. So, although there's banana in every recipe, you'll taste it the most in the plain version.

I used 7 ounce ramekins for my single serve baked oatmeal. But no worries if you don't have those handy...you can use a muffin pan instead. Just be aware that this recipe will fill a 7 ounce ramekin, so if you use a muffin pan instead, you'll get smaller servings.
π₯£ How to make baked oatmeal
This might just be the easiest recipe in the world.
Preheat oven to 350β and grease ramekins with butter.
In a bowl, mash a large banana with a fork. Then, add the rest of the ingredients and give it a good stir.
Once the base ingredients are mixed together, stir in your add-ins.
β²οΈ Baking
Pour into a ramekin and bake on the middle rack of your oven for 35 minutes or until a toothpick inserted in the center comes out clean.
Tip: If you're making multiple single serve baked oatmeals at once, it may be helpful to place them all on a baking sheet. Just be careful and use two hands, it gets quite heavy!

- Ramekins - Don't have any ramekins? No problem! Use a muffin pan instead.
- Milk - Use any type of milk you like, whether that's low-fat milk, whole milk, almond milk, soy milk, oat milk, or anything else you enjoy.
- Honey - Any liquid sweetener will work well in this recipe. Replace honey with maple syrup, agave, date syrup, or liquid stevia.
- Protein baked oats - Although I don't use protein powder in my recipe, you can certainly mix some in for a protein boost.

- Peach - A flavor combination of peaches, cinnamon, and spicy ginger

- Mixed Berry - Toss in a few of your favorite berries for a sweet treat

Absolutely! Just prepare your baked oats and bake as usual. When covered with plastic wrap and placed in the fridge, they'll stay good for several days.
After baking and cooling, cover tightly with plastic wrap and place in the freezer. Defrost in the fridge overnight, then just microwave for about 1-Β½ minutes to warm them up for breakfast. I have a friend who makes her single serve baked oatmeal in a muffin pan. She told me that after letting them cool a bit, she'll place the whole pan in the freezer until they get cold. Then, she individually wraps each one in plastic wrap and keeps in the freezer until ready to enjoy.

Plain/Banana Baked Oatmeal
- 1 large banana
