These melt-in-your-mouth coffee bean cookies are the perfect snack with, well, coffee! With a rich coffee flavor with just a hint of chocolate and a pillowy soft texture, they're adorably sweet edible coffee beans.

Indulge me for a moment...
The evening started out innocently enough. I was making a fresh batch of coffee bean cookies and all was going well...until it was time to start taking photos. I plugged in our fancy photography light and it didn't work.
Oh shoot, I forgot it's been on the fritz lately. I call to Erich, who starts playing around with the cord when it suddenly makes a very ominous popping sound. Ughhhhh, guess I'm running out to the store at 8 o'clock at night.
So, I chucked the bowl of cookie batter into the fridge (which coincidentally is how I learned that this perfectly chilled the cookie dough) and off to the store I went, my eyes darting left and right the entire time, scanning for deer. Out here in the "country" you never know when a deer or opossum or even a turkey will step right in front of your car (Side Note: I just recently learned that Bucks County is not named for it's extraordinarily high population of deer).
Twenty minutes later, I arrive at the store, purchase a new power cord, and on my way out I notice a couple loading up their truck with a snowblower, snow shovel, and bags of ice melt. I quietly chuckled to myself, thinking we're only forecast to get 3" of snow tonight...you must be new here.π So I'd like to thank them for turning my frustration into laughter.
Anywayyyyy, I returned home by 9 pm and continued baking...
My coffee bean cookie recipe is almost ridiculously simple, using ingredients you already have in your pantry, and results in the most adorable cookies you've ever seen. And not only are they cute, they're absolutely delicious too, perfect with a hot cuppa on a cold winter's day (maybe alongside my salted caramel cream cold brew). Yes, I'd like some coffee with my coffee please... Fair warning though, these cookies do require a bit of self control. I ate six of them in one sitting.
π§Ύ Ingredients
- Freshly brewed coffee
- Salted butter
- Powdered sugar
- Egg yolk
- Vanilla extract
- Cake flour *
- Cornstarch
- Cocoa powder
* If you don't have any cake flour handy, you can make your own substitute: Measure 1 cup of all purpose flour, then remove 2 tablespoons. Replace that 2 tablespoons of all purpose flour with 2 tablespoons of cornstarch and whisk together well.

π₯£ Cookie dough
First, cream butter and powdered sugar. Then whisk in the egg yolk, brewed coffee, and vanilla extract (it will seem like it's not coming together at first, but just keep going for a minute or so).
In a separate bowl, mix together the cake flour, cornstarch, and cocoa powder.
Slowly add dry to wet ingredients. The resulting batter will almost look like cake frosting. Place the bowl in the fridge for 1 hour to chill, which will allow it to firm up a bit and be much easier to work with and form into coffee bean shapes.
π« Forming the cookies into shape
Preheat oven to 325β.
Using a teaspoon (a 1-teaspoon measuring spoon, not the one from your silverware drawer), measure out heaping teaspoonfuls of batter.
Roll the teaspoonfuls of batter between your hands, forming a ball. Then, roll it back and forth once or twice, to form it into an oval. Lightly press the ends with two fingers and place on a lined baking sheet.
Finally, using a toothpick, press lengthwise into the center of each cookie, about halfway down, to get that coffee bean appearance.
Hint: If you don't have a toothpick, instead use the back of a knife or a sharp-edged spatula.

Bake for 12 minutes, then let cool and enjoy!
At the end of this interesting evening, I was finally able to sit down at 10 o'clock and enjoy my delicious coffee bean cookies, just as the snow started to fall...βοΈ

Coffee Bean Cookies
Ingredients
