Bacon-Apple-Pecan Stuffed French Toast

Bacon-Apple-Pecan Stuffed French Toast…that’s a mouthful. And in more ways than one! This is definitely not your everyday plain french toast, no ma’am. It’s stuffed with brown sugared bacon, apples, and pecans, plus a layer of mascarpone for a decadent creamy layer throughout. This easy recipe is loaded with flavor and lots of different textures, it’s a Sunday morning party for your taste buds.

 

French toast is the very first dish I ever learned to cook. My mom took my sister and I to a bookstore one day when I was about 12 years old. After selecting a beginner’s cookbook for kids and with mom at my side by the stove, I embarked on my very first cooking experience. And French food, no less! But now, I wonder…

 

Is French toast French?

Believe it or not, no.  French toast actually originated in the Roman Empire wayyyy back in the 4th or 5th century, where it was known as aliter dulcia (“another sweet dish”) and was prepared very much like we do today. This tasty meal eventually found its way to Germany (where it was known as Arme Ritter (“poor knights”), and France, where it’s called pain perdu (“lost bread,” because they used stale or “lost” bread). Although this breakfast dish is now well known in many countries around the world and has just as many names, the term “French toast” wasn’t seen in print until 1871, in the Encyclopedia of American Food and Drink.

Stuffed French Toast Ingredients

  • 2 slices of thick bread (like Texas toast)
  • 1/4 of an apple, cored and sliced into 1/4″ slices
  • 3 strips thick-cut bacon
  • 1 Tbsp brown sugar
  • 3 Tbsp pecans, crumbled into small pieces
  • 2 oz mascarpone (or cream cheese)
  • 1 large egg
  • 1 Tbsp milk

 

How to make Stuffed French Toast

Preheat toaster oven to 400°F. Place bacon and apple slices on a foil-lined baking sheet and sprinkle both with brown sugar, and bake for 15 minutes.

After 15 minutes of baking, add pecans, making sure they get into some of that rich bacon fat in the pan, and bake for another 3 minutes. Remove from oven and roughly chop the bacon into smaller pieces. And no, you can’t really drain the bacon because the brown sugar coating will get stuck to the paper towels (don’t ask how I know this).

Assemble the stuffed french toast. First, spread a layer of mascarpone (or cream cheese) on both slices of bread. Then, layer remaining ingredients (apple slices, bacon, and pecans), and add the second slice of bread on top, like a sandwich.

Preheat a pan on the stove to medium heat. In a shallow bowl, whisk together egg and milk. Dip one side of the “sandwich” into the egg mixture, then flip and dip the other side as well. Place in the preheated pan and cook for about two minutes per side. Serve with maple syrup. Bon appétit!

Ingredients
