- Rice - White, brown, or wild rice would all work wonderfully with this dish. For a carb-free option, try cauliflower rice.
- Soy sauce - Whether you choose to use regular, dark, light, or low-sodium soy sauce, it's all about personal preference.
- Brown sugar - Light brown sugar works very well in this recipe. You can certainly substitute dark brown sugar, just be aware that the sauce is already pretty sweet due to the brown sugar and honey.
π₯£ How to make chicken teriyaki bowls
First, start by cooking the rice. Add 1 cup of rice and 2 cups of water to a covered pot on the stove over medium heat. Cook for 10 to 15 minutes, or until the rice has soaked up all of the water.
While the rice is cooking, chop the chicken breast into bite-size pieces and season with salt and pepper. Heat olive oil in a pan over medium heat. Once the pan is hot, add the chicken, turning it occasionally until all sides are browned and the chicken is cooked through, about 10 minutes.
At this point, you have a few options: Either remove the chicken from the pan and place it on a dish covered with aluminum foil to keep it warm, while you stir fry the vegetables in the same pan and then make the sauce in the same pan. Or...you can steam the vegetables in another pot, and make the sauce in yet another pot. The choice is yours.
To make the sauce, add all of the sauce ingredients (except for the cornstarch) to a pot and bring to a simmer. In the meantime, stir together 1 Tablespoon of cornstarch with 2 teaspoons of water. Once the sauce is simmering, add the cornstarch mixture to the pot and stir frequently until the sauce thickens. This should take about five minutes.
Once the sauce has thickened, add the chicken to the sauce pot and stir together. Let the chicken and sauce mingle and warm up together for about two minutes.

To serve your chicken teriyaki bowl, first fill the bowl about two-thirds with rice. Then, add the chicken, vegetables, and any other toppings you like over the rice. Finish the dish with a spoonful of sauce over the top and a sprinkling of sesame seeds. Enjoy!

Rice
- 1 cup rice

- ΒΌ cup soy sauce
- ΒΌ cup light brown sugar, packed
- 2 Tablespoons rice vinegar
- Β½ teaspoon sesame oil
- 1 teaspoon ground ginger
- 2 cloves garlic, minced
- 2 Tablespoons honey
- Β½ cup water
- 1 Tablespoon cornstarch, stirred together with 2 teaspoons of water
