After Easter is over and you’ve eaten a basketful of chocolate, what to do for lunch on Monday? Definitely not more ham. Hmm…...What about all those Easter eggs you lovingly colored and decorated? There’s lots of yummy goodness inside them! Let’s make an Egg Salad Sandwich! Here are 3 recipes that Erich & I came up with this weekend that will be sure to please. Whether you like spicy wasabi or buttery smoked salmon or sweet bell peppers....we’ve got a recipe for you!
Viana’s sandwich is a delightful combination of sweet & refreshing
- 4 large eggs
- 3 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 3 tablespoon red bell pepper, thinly sliced
- 1 teaspoon dill
- 1 tablespoon onion, diced
- Salt & freshly ground pepper
Chop eggs into small pieces and place in a bowl. Add the rest of the ingredients and mix together with a fork. Spread mixture over your favorite soft bread and enjoy!
Here’s Erich’s absolute favorite creation. It’s smooth and satisfying and a way to get more out of your smoked salmon than just eating it plain on a piece of baguette.
- 4 large eggs
- 2 oz smoked salmon
- 2 tablespoon mayonnaise
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1 tablespoon chives, chopped
- 1 tablespoon shallots, chopped
- Salt & freshly ground pepper
Grate eggs using the wide side cheese grater...this will make them amazingly fluffy! If any larger chunks break off, simply chop them into small pieces with a knife. Add the rest of the ingredients and mix together with a fork. Spread mixture over your favorite soft bread and enjoy!
This variation by Erich brings your palate alive. It’s zesty and you can adjust the heat level to your liking by adding more horseradish or wasabi.
- 4 large eggs
- 2 tablespoon mayonnaise
- 2 teaspoon Dijon mustard
- 2 teaspoon wasabi (or horseradish, your choice)
- 1 tablespoon chives, chopped
- 1 tablespoon shallots, chopped
- Salt & freshly ground pepper
