Salad
- ½ ruby red grapefruit, peeled and cut into sections
- ½ navel orange, peeled and cut into sections
- 1 mandarin, peeled and cut into sections
- 2 cup arugula
Vinaigrette
- ⅓ cup raw apple cider vinegar (with the "mother")
- ⅔ cup extra virgin olive oil
- 2 teaspoons Dijon mustard
- 1 tablespoon chia seeds
- 1 teaspoon honey
- ½ teaspoon Maldon sea salt
- ¼ teaspoon freshly ground black pepper
Mix ingredients in a jar with a tight-fitting lid.
Cover and shake.
Let stand for at least 10 minutes.
Cover, shake vigorously, and serve.
