Arugula Citrus Salad with Chia Seed Apple Cider Vinaigrette

A combination of sweet and tart fruits with peppery arugula, all topped with a chia seed apple cider vinaigrette.

Ingredients

Salad

  • ½ ruby red grapefruit, peeled and cut into sections
  • ½ navel orange, peeled and cut into sections
  • 1 mandarin, peeled and cut into sections
  • 2 cup arugula

Vinaigrette

  • cup raw apple cider vinegar (with the "mother")
  • cup extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • 1 tablespoon chia seeds
  • 1 teaspoon honey
  • ½ teaspoon Maldon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Mix ingredients in a jar with a tight-fitting lid.
  • Cover and shake.
  • Let stand for at least 10 minutes.
  • Cover, shake vigorously, and serve.
