Creamy Tuscan Chicken Pasta

Ingredients

  • 12 ounces pasta (your favorite shape)
  • 1 pound chicken breast, cut into 1" pieces
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 Tablespoons olive oil
  • 1 Tablespoon butter
  • ½ medium onion, finely chopped
  • 4 ounces sun-dried tomatoes
  • 2 cups spinach leaves (packed into measuring cup)
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • ¾ cup heavy cream
  • ¼ cup dry white wine
  • ½ cup grated Parmesan cheese

Instructions

  • First, start heating up a pot of water on the stove for the pasta. Once it reaches a rolling boil, add salt and pasta. In the meantime, we'll start making the chicken and the sauce.

  • Season the chicken with salt, pepper, and Italian seasoning.

  • Sprinkle some olive oil in a large saute pan, over medium-high heat. Cook cubed chicken for 3 to 4 minutes per side, then place the cooked chicken in a bowl and set aside for now.
    2 Tablespoons olive oil, 1 pound chicken breast, cut into 1" pieces
  • To start making the sauce, reduce heat to medium and add a tablespoon of butter to the pan.

  • Saute onion, sun dried tomatoes, and spinach until the spinach leaves wilt.
    ½ medium onion, finely chopped, 4 ounces sun-dried tomatoes, 2 cups spinach leaves (packed into measuring cup)
  • Then, add the garlic and cook for an additional 30 seconds to 1 minute.
    2 cloves garlic, minced
  • Now add the cream, wine, and Parmesan cheese to the pan and bring to a simmer.
    ¾ cup heavy cream, ¼ cup dry white wine, ½ cup grated Parmesan cheese
  • Finally, add the cooked pasta and chicken back to the pan and continue simmering for 5 minutes.
  • Serve and enjoy!
