First, start heating up a pot of water on the stove for the pasta. Once it reaches a rolling boil, add salt and pasta. In the meantime, we'll start making the chicken and the sauce.
12 ounces pasta (your favorite shape)
Season the chicken with salt, pepper, and Italian seasoning.

Sprinkle some olive oil in a large saute pan, over medium-high heat. Cook cubed chicken for 3 to 4 minutes per side, then place the cooked chicken in a bowl and set aside for now.
2 Tablespoons olive oil, 1 pound chicken breast, cut into 1" pieces
To start making the sauce, reduce heat to medium and add a tablespoon of butter to the pan.

Saute onion, sun dried tomatoes, and spinach until the spinach leaves wilt.
½ medium onion, finely chopped, 4 ounces sun-dried tomatoes, 2 cups spinach leaves (packed into measuring cup)
Then, add the garlic and cook for an additional 30 seconds to 1 minute.

Now add the cream, wine, and Parmesan cheese to the pan and bring to a simmer.
¾ cup heavy cream, ¼ cup dry white wine, ½ cup grated Parmesan cheese
Finally, add the cooked pasta and chicken back to the pan and continue simmering for 5 minutes.
