Ingredients

  • 1 cup water
  • 1 cup light brown sugar, packed
  • 3 Tablespoons molasses
  • 1 inch piece of ginger root (or 2 teaspoons ground ginger)
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • teaspoon nutmeg
  • ¼ teaspoon allspice
  • 1 teaspoon vanilla extract
  • 5 lightly crushed cardamom pods (optional)

Instructions

  • Add the water, brown sugar, molasses, ginger, cinnamon, cloves, nutmeg, allspice, lightly crushed cardamom pods (if using), and vanilla to a medium saucepan and give it a quick stir.
1 cup water, 1 cup light brown sugar, packed, 3 Tablespoons molasses, 1 inch piece of ginger root (or 2 teaspoons ground ginger), 1 teaspoon cinnamon, ¼ teaspoon ground cloves, ⅛ teaspoon nutmeg, ¼ teaspoon allspice, 1 teaspoon vanilla extract, 5 lightly crushed cardamom pods (optional)
  • Place the pot over medium heat and bring it to a gentle boil.
  • Once it's boiling, reduce the heat and let it simmer for about 10 minutes so the flavors can meld together.
  • Remove the pot from the heat and let it sit for another 10 minutes to mellow out the ginger a bit.
  • Finally, pour the syrup through a fine mesh strainer to catch the ginger root and cardamom pods, then transfer it to a jar or bottle.
  • Add to breakfasts, desserts, cocktails, or coffee! Enjoy!

Notes

💫 Variations and mix-ins
  • 🍹 Cocktail Twist - Add a splash of gingerbread syrup to cocktails - an espresso martini, old fashioned, or even a simple vodka soda gets a little personality.
  • ☕ Coffee Lover - Stir a tablespoon or two into your morning coffee or latte for an instant gingerbread latte without the drive‑thru line.
  • 🥞 Breakfast Upgrade - Drizzle over pancakes or waffles for a breakfast that suddenly feels festive.
  • 🥐 Brunch & Toast - This syrup is also fantastic on something richer, like French toast.
  • 🍦 Dessert Drizzle - Warm the syrup slightly and pour it over desserts.

🧺 Storage
Store the syrup in a clean jar or bottle in the fridge (mason jars work great for storing!) - it keeps for up to three weeks and is ready whenever you want to add a little gingerbread flair to coffee, cocktails, breakfast, or dessert.

👩‍🍳 Pro tips
  • 🥄 Store syrup in a squeeze bottle for easy pouring.
  • 🔥 Warm slightly for drizzling over ice cream or pound cake.
  • ☕ Mix a teaspoon into hot chocolate or coffee for a quick gingerbread latte.
  • 🥞 Use it to brush over pancakes, waffles, or French toast right before serving for extra flavor.
  • 🏷️ Label your jar - this syrup disappears fast, and someone might mistake it for molasses.
  • 🍯 Adjust the spices to taste - a little extra ginger or cinnamon amps up the flavor without extra work.
