- 2 waffles
- 6 large strawberries (plus extra for garnish), hulled, chopped, and mashed with a fork
- 2 tablespoons granulated sugar, divided
- ⅓ cup heavy cream
- 2 tablespoons cream cheese, softened to room temperature
- ¼ teaspoon vanilla extract
- 1 tablespoon Nutella
- Sprinkle of confectioners sugar (optional)
We're first going to make the strawberry compote. Hull and slice about 6 large strawberries, and mash them with a fork.
Place the mashed strawberries and 1 tablespoon of sugar into a small saucepan and warm up over low-medium heat. Simmer for about 5 minutes, stirring occasionally.
Next, start making the waffles of your choice, whether that means toasting or cooking.
While the strawberries are simmering and the waffles are cooking, let's make the whipped cream. This can be done by hand with a whisk, but a stand mixer or handheld electric mixer makes it much easier.
Mix together the heavy cream, softened cream cheese, 1 tablespoon sugar, and vanilla until firm peaks.Note: This whipped cream won't really reach stiff peaks as much as a regular whipped cream does, due to the addition of cream cheese. Place Nutella in a small bowl and microwave for 30 seconds. Then, stir with a spoon to make it soft and spreadable.
Once the waffles are ready, top them first with Nutella, then layer on the strawberry compote and whipped cream. Enjoy!
