Ridiculously Easy Gourmet Tuna Sandwich
A delicious twist on a classic lunchtime favorite. Just think about the meaty tuna, the briny capers, creamy mayo, and the snappy jalapeño. Your taste buds will be longing for more.
Servings: 1 delicious sandwich
- 1 big slice of bread, toasted
- One 5-oz can of tuna
- 2 tablespoon mayonnaise
- 2 tablespoon extra-virgin olive oil
- 1 small shallot, chopped
- ½ jalapeño, deseeded & chopped
- 1 tablespoon capers, chopped
- Salt & pepper
Drain the water or oil from the tuna can, and add the tuna to a bowl. If you like the chunky kind, break it apart with a fork.
Add the chopped shallot, jalapeño, and capers.
Mix in the mayonnaise and olive oil, and season with salt & pepper (add hot sauce or green salsa if you like). Give it a good stir.
If you happen to have a fresh lemon handy, squirt some lemon juice on the mixture to brighten it up a bit!
