- ¼ cup fresh lemon juice
- 1 tablespoon simple syrup
- ½ cup cold water
- ¾ cup watermelon, blended
- ¼ teaspoon rosemary, roughly chopped
- Ice cubes
To make simple syrup, simply combine 1 cup water and 1 cup granulated sugar in a pot and bring to a summer until all sugar has dissolved. Place in a container and chill in the fridge. This will last two to three weeks.
Place about 1 cup chopped watermelon in a blender. I found it necessary to carefully press it down with a wooden spoon, so all the chunks were touching the cutting blade. Blend until smooth.
I also grabbed a sprig of fresh rosemary from the garden, took off a few needles, and broke them up by hand. I’m thinking it was about ¼ teaspoon or so.
In a glass, combine all ingredients, stir, garnish with small slices of watermelon and lemon, and enjoy!
