This Summer Salad with Fresh Garden Herbs makes a delicious light lunch or side dish to any outdoor barbecue. This time of year, the tomato plants are just bursting with tons of juicy, tasty goodness.
Meanwhile, my cucumber plant is reaching Jurassic dimensions and I’m starting to think it’s attempting a Guinness World Record for most cucumbers on a plant. A few feet away from the vegetable garden, the herbs are showing off their beautiful leaves and branches, just asking to be taken into the kitchen, to add glorious flavor to any number of dishes.
With the sun shining down and humidity increasing, threatening thunderstorms later in the day, the hot sticky weather calls for light fare today. No heavy dishes or sauces…just refreshing, light flavors. So, I turn to my garden to see what veggies are ripe for the picking. I immediately decide to pluck a few red and yellow tomatoes, along with some cucumbers and herbs.
When Erich and I traveled to the south of France earlier this summer, we were treated to the azure blue water of the Mediterranean, sunny skies every day, and flavorful cuisine. After spending some time on the coast, we then decided to trek more inland and visited Provence, the land of lavender.
While the plants weren’t in full bloom for another couple weeks, they were starting to show their blooms and the scent was unbelievable. We learned that there are actually multiple types of this plant, most notably lavender and lavandin…but that’s a whole article by itself.
After returning home, I felt inspired to try some new dishes using the lavender (or lavandin) that we grow in our backyard. I decided to add some to this dish, being careful to use just a little bit, as it can become perfumy if too much is added.
This summer salad is so delicious, it will please your taste buds while simultaneously being light and refreshing. Enjoy!

Summer Salad with Fresh Garden Herbs
- 3 medium tomatoes, chopped
- 1 large cucumber, peeled and chopped
- 1/2 medium onion, chopped
- 8-10 large basil leaves, thinly sliced
- 1/4 tsp lavender, finely chopped
- 1 c sour cream
- 2 Tbsp rice vinegar
- Salt & pepper
- Chop tomatoes, cucumber, and onion, and add to a large bowl.
- Chop herbs and mix together with vegetables.
- Add sour cream, vinegar, salt, & pepper to bowl and mix well with a spoon.
- Serve immediately.
